I TOTALLY LOVE greasy cheesy food. I don't count the calories or the amount of fat the dish would deposit in me. I paid the price of course. My husband is completely opposite to me. He runs marathons, hits gym frequently and loves all the healthy stuff. Because of him I was pushed to cook some of the healthy snack that I disliked and we frequently quarrel over food. Then I decided to cook some of my favourite unhealthy snack in a healthy way.
NACHOS was one of them. In restaurants they are smothered with gooey cheese and that's how I like them. But I can't serve them like that to my husband, they will definitely end up untouched and in heated argument. So I came up with these wheat nachos totally fat free, fresh corn salsa and replacing the gooey cheese with a corn dip lesser in calorie. Delicious and totally guilt free indulgence!
You Will Need:
For Nachos
Cup of Wheat flour
1/4 tsp salt
Required water to make a dough
Olive Oil (Optional)
For Corn Salsa
Cup of sweet corn kernels
2 Finely chopped onions
2 Finely chopped tomatoes
1 Bell Pepper finely chopped
1 Green chilli finely chopped
2 tsp Lemon Juice
For Cream Corn Dip
1 tbsp unsalted butter
1 tbsp plain flour
1 cup skimmed milk
1/2 cup of sweet corn roughly chopped in a food processor
1/2 tsp pepper
1/2 Chilli powder
1/4 tsp sugar (Optional)
Salt to taste
The Cooking:
For the nachos mix all the ingredients to form a soft non - sticky dough. Make small balls out of the dough and roll out thin and round shape like how you would do for chapati. And cook them over a hot pan for a min on each side. Stack them one on top of the other and with a large sharp knife cut the stack in half. Cut each of those half in half again, forming wedges. Repeat with other side.

Spread them on baking pan covered in foil and bake in a preheated oven at 100c for 5 min or until the nachos are crisp. Careful, they will be very hot.
Mix all the ingredients for the salsa and chill.
Heat a heavy bottom sauce pan over medium heat and melt the butter. Then add in the plain flour and stir continuously. Once it turns a bit crumbly pour in the milk. And keep whisking continuously till all the lumps are dissolved. Now stir in the corn, pepper, salt, chilli powder and sugar. Once the sauce slightly thickens take it off heat, let it cool and chill.
Serve the nachos topped with salsa and drizzled with cream corn dip or any other way you like it.
Now Why ditch unhealthy snack that you love munching...Just try to make them as healthy as possible and enjoy!
Important Pointers:
- You can substitute the wheat flour with plain flour, I opted wheat flour as an healthier option.
- Roughly chop the corn in the food processor, don't make it fine and paste like.
- Keep an eye on the nachos baking in the oven. They turn brown very quickly. Take them out as soon as they become crisp.
