Roasted Tomato Corn Salad

DSC04035Ok first things first, salads are never my thing (unless it is bathed in mayo). But this ROASTED TOMATO CORN SALAD with Vinegar Yogurt Dressing is something I just put together with ingredients I always have in my pantry, nothing gourmet. 

The crunch from bell peppers, the sweetness of the corn and the saltiness from the oven roasted tomatoes were just fab. I have crumbled cottage cheese on the salad but if you can get your hands on some feta, good for you. The dressing was sweet and very salty, but when tossed with the salad it was just perfect. A very simple salad to toss up, that's sure to satisfy the Indian Palate.

You Will Need:

A Cup of Sweet Corn Kernels (Cooked)
1 Large Onion, Cubed
Vinegar Yogurt Dressing
Cottage Cheese as Much as You Want

The Cooking:

Toss together all the ingredients except cottage cheese and chill.
Crumble the cottage cheese over the salad just before serving.
