The cuisine of Udupi is plain delicious. And these buns are from the kitchen's of Udupi. The term "buns" are very misleading actually. When hubby mentioned he wants Mangalore Buns I thought them to be some kind of yeast savory buns. But when I looked up in the internet I was surprised to learn it had nothing to do with baking or yeasts. Its actually nothing but pooris that are flavoured with banana. I wonder how they came up with such a name. But I have to tell you I really loved it. Its super simple to make and it has this delicate sweet banana flavour coming through.

 You Will Need:
2 Cups of Plain Flour
1 Large Ripe Banana, Mashed
2 tbsp Yogurt
2 - 3 tbsp Powdered Sugar (according to your taste)
A tbsp of Powdered Almond (Optional, I Just added)
A Generous Pinch of Salt
1/2 tsp of Cardamom Powder
1/4 tsp of Baking Soda
A tbsp of Ghee
Oil to Deep Fry

The Cooking:
Place all the ingredients in a bowl and mix well to form a non sticky dough. Divide them into small balls and roll them out to a thickness of a 5 rupee coin. Its just like how you would make a poori. Heat oil in a kadai to deep fry. Once the oil is hot carefully drop in the buns. Gently slide the bun along the sit of the kadai to avoid hot oil splashing. Wait till the bun surfaces and once they surface from the bottom using your ladle splash the oil on the top. This helps them to puff up evenly. If you have made poori before it the same thing. Once fully puffed flip to other side and fry for few seconds till they are a light golden brown colour. Place them on a kitchen towel to absorb any excess oil.
Serve hot!

BANANA CINNAMON SMOOTHIE is the simplest of all breakfasts on the go. Its healthy, delicious and packed with all nutrients to keep you going. This smoothie is packed with protein, vitamins, folic acid, calcium, dietary fibers and magnesium. Its such a quick fix when you don't have time to grab a bite and this makes a wonderful snack for pregnant women in fighting fatigue.

I always use frozen banana and cold milk. What this does is it makes the smoothie super super thick!

You Will Need:

1 Tall Glass of Milk
1 Ripe Banana
Pinch or Two Cinnamon Powder
1/2 tsp of Vanilla Extract
2 Tbsp of Sugar / Honey

The Cooking:

Add all the ingredients to a blender and blend till smooth and Enjoy!

Pancakes are little A's favorite. And what can be more healthy and delicious other than these fluffy Whole wheat banana pancakes. I really like using very ripe bananas for these since they naturally sweeten the pancakes and you can avoid adding extra sugar. This is something I like to cook on a late morning. Super simple and so good.

When offering pancakes to babies less than 12 months I would suggest you avoid adding sugar, salt and baking powder. Its not advisable to give salt and sugar to babies less than 12 months and avoiding baking powder will yield flatter pancakes but that fine.

You Will Need
1 Large Overly ripe banana
1-1/3 cups of Plain Flour
1 Cup of Whole Milk
1/4 Cup of Yogurt
1 Whole eggs
A tsp of Vanilla extract
2 tsp Baking powder
A tsp of Cinnamon powder
2 tbsp of Brown Sugar
1/4 tsp Salt
Chopped Nuts / Choco Chips are Optional Add ons

The Cooking:
In a bowl smash the banana with the back of a fork and add the eggs, milk, vanilla extract, yogurt, sugar and cinnamon. Whisk well. Now sift in the flour and baking powder and mix well. Don’t make it into a smooth batter. It should be little lumpy. Beating too much will make heavy pancakes. Heat a griddle or a pan on medium heat until hot. Slightly brush the surface of the pan with butter and gently spoon in the batter. Once small bubbles appear on the edges it’s time to flip the pancake. It takes only a couple of min to cook on medium heat. You can serve them with some fresh fruits, juices or maple syrup drizzled all over them. It’s quick, easy and very filling too.
